Leftover Broccoli Stems? Don’t Throw Them Out!



Many of us only use the florets of the broccoli plant. But, what about the poor little broccoli stems? I used to throw them out, but Mr. Cyclist had a genius idea for cooking them.

He sliced the stems on the julienne setting on the mandolin. Then, sauteed in oil, chili oil, garlic, and sriracha sauce. Topped with black sesame seeds. It was absolutely delicious, but super spicy. I could only eat a few bites at a time.

We had a cute little salad with it, and some miso soup!

Yesterday, I also went to the farmer’s market to load up on fruits, vegetables, and spices. It was a mad house. I finally made it out of there alive, and loaded up my fridge.

You can’t really tell from this picture, but there are loads of oranges, clementines, spinach, kale, carrots, celery, cucumber, peppers, herbs, apples, some dried fruit, eggplant, brussels sprouts, and more…

I also picked up these spices for $0.40-$2 each!!

What a steal! This week, I will have plenty of healthy recipe ideas ready to go. It definitely helps to do this shopping ahead of time.

Caturday!



This weekend we adopted two precious kitties from Angels Rescue! We had been planning to adopt them, and we got to pick them up Saturday!

Brother and sister kittens that we re-named Liz Lemon aka “Lemon” and Jack Donaghy aka “Jack”. Silly, I know, but for some reason it fits them.

Earlier that day I stopped by the farmer’s market to pick up some goodies.

Mostly kale, sweet potatoes, and lots of carrots.

They had some really good looking lettuces:

When your veggies look pretty it makes it more exciting to eat them.

And turn into pizza! Haha!

Cooked some of the kale with onions, and added a dollop of fat free ricotta. Tasty.

Week of Fresh Produce



I serendipitously came across a fresh produce stand on my way home one day. Good thing I had to take an alternate route home!

I talked at length with the man who owned the stand about the difference between a darker peach and your standard Georgia peach (in this case, it was from South Carolina). I told him I still preferred the traditional Georgia peach flavor.
Absolutely delicious and perfect for snacks during the week.

Also got some fresh tomatoes to make the salad I had at my parents‘ last week.
It is so easy and fresh tasting. Perfect for lunches. The cucumbers were from the produce man as well. I can’t stand waxy cucumbers. Would you like to eat some wax with that vegetable? Nasty.

Was given loads and loads of Georgia vidalia onions… we have yet to make french onion soup or some other recipe that calls for multiple onions. But, at least I made some onion-y quinoa!
I remember thinking, “I shall call this: Onion Quinoa”. Haha. Lots of caramelized onions. It turned out good, but nothing amazing.

And can’t forget about Salsa Shark that made it’s debut this week:
Watched Clerks for the 1st time this past week, and this was my favorite part.

Haha! Have a good weekend, everyone! Off to the beach in the morning. I just hope it doesn’t rain.

Make at Home Gourmet Sandwich



I don’t make a whole lot of sandwiches at home because there is something tasty about a sandwich that someone else makes for you.

But, today I had all the key ingredients for making a gourmet, at-home sandwich!

  • Pesto from Costco: Delicious! And the first ingredient is basil. Now of course this is a high calorie item, but contains all healthy monounsaturated fats from olive oil and pines nuts. And you only need 1-2 tsp.
    • You could make your own pesto as well
  • Whole wheat bread
  • Tomato slices
  • Trader Joe’s herbed turkey (nitrite free!)
  • Spinach leaves
  • Cheddar dill cheese (from Farmer’s Market)

And voila! You have an at-home gourmet sandwich.
