I had been craving a chickpea salad ever since I had the chickpea salad at a cafe near where I work. I know, I am strange. Anyway, I found this chickpea salad recipe on Eating Well. The salad contains chickpeas, red onion, cucumber, cherry tomatoes, and reduced fat feta cheese. Super easy.
Healthier Dill Dressing
Makes about 1 Cup. Original recipe here.
- 3/4 C. fat free cottage cheese
- 1/4 C. nonfat milk
- 1/4 C. light mayo
- 1 tsp. minced garlic
- 1 Tbsp. chopped red onion
- 2 Tbsp. apple cider vinegar or white vinegar
- 1 Tbsp. dill
- salt and pepper
Directions: Add all ingredients to a food processor and blend until smooth and creamy. You will only need about half of the dressing for the chickpea salad.
This wasn’t the most amazing salad I have ever made, but it was nice and cold and refreshing after coming back from a hot bike ride. Also, I am not the biggest fan of dill-flavored dishes, so others who like dill may find this dish more tasty.
This salad would be a great lighter side dish to bring to a summer get-together because 1 cup is about 90 calories compared to 300 or 400 calories for traditional potato and pasta salads.
Hmm, still thinking of other chickpea salads I could make that might be even tastier…
