Sometimes it is easy to get sucked into your own little world, and forget about others.  But, this is important to me as I am a true New Yorker at heart. I grew up in New York until I was 16, then moved here to the South. So, this post is dedicated the relief effort for anyone who wants to find out more info about donating or helping out!

Ways to Help:

I decided to re-post a comforting dessert recipe. Everyone has done many entree recipes, but why not the most “comforting” sinful dish I can think of! At least my version is trans fat free, and improved ingredients :-)

I used Immaculate Baking Company’s cinnamon bun dough and biscuit dough which contains no trans fat.  

Trans Fat Free Monkey Bread Recipe
Ingredients: 

  • 2 cans cinnamon bun dough (see above)
  • 1 can non-flaky biscuit dough (Immaculate Baking Co.)
  • 1 stick Earth Balance
  • 1 stick butter (you can use 2 sticks Earth Balance, total, instead of butter if you like)
  • 1 tsp. cinnamon or pumpkin pie spice
  • 3/4 cup white sugar (you could substitute 2-4 Tbsp. stevia substitute and 1/2 cup real sugar–you need real sugar for the caramelization)
  • 1/2 cup brown sugar, packed when measuring

Directions:

  1. Preheat the oven to 350 F. Open all the biscuit dough and cut each biscuit into quarters. See Pioneer Woman recipe for monkey bread to get a better idea of the step-by-step.
  2. Toss all the biscuit dough pieces into a gallon zip top bag with the white sugar and cinnamon. Shake around to coat the pieces.
  3. Heat the butter and brown sugar in a small sauce pan over medium-low heat until the mixture turns brown and the sugar melts more. *You can do this in the microwave if you like
  4. Dump the biscuit dough pieces into a bundt pan (you do not need to grease the pan). Press down gently on dough in the pan.
  5. Pour the butter/brown sugar mixture over top of the dough. Place in the oven.
  6. Cook for about 35-42 minutes until it looks dark brown and the edges look crispy.
  7. Cool 15 minutes, then turn out, and see warm. The bread will stay warm for a few hours if you keep it covered.

This is what it should look like when you take out of the oven, and then (below) when you turn it upside down. Delicious! …not so nutritious, sorry. Everyone loves it though. A definite crowd pleaser.

The goal here was not to make health food. So that is not what this is. It’s just a slightly healthier alternative to the traditional treat. Small tweaks and changes help without having to sacrifice flavor. And, it’s all about moderation and getting comfortable with that moderation. If you have a few bites of this–it won’t hurt you.

Shut the World Out and Move

I have been in the process of moving the last 48 hours, and have been dead to the world, including the blogosphere. Meals have consisted of toast, prunes (an easy antioxidant source), leftover fridge food, Papa John’s (I know…), Subway, almonds, Brazil nuts, tuna, and finally today I made one of my staple meals:

  • Some form of a lean meat/fish (tonight was a frozen organic turkey burger)
  • A vegetable (broccoli)–try to make this half the plate
  • Sweet potato with light sour cream

You can never go wrong with a balanced meal like this. And I scrambled to get it ready in about 10-15 minutes!

Then, Mr. Cyclist requested pistachio frozen yogurt from Yogurtland. Love this place. After the first day of moving, I had been on my feet all day, I felt like I was a bottomless pit welcoming calories.

Anyway, I will get back to posting some new recipes and ideas soon!

2012 Resolutions

I believe this will be the start of my third year of more serious blogging. But, hah, when is my blogging ever that serious?

Anyway, resolutions to me are more just things I want to do this year.

  1. Be a better blogger. Pay more attention to other blogs, and interact more in the blogosphere because this is a hobby of mine that I love.
  2. Pick up another new hobby. In 2011, I got my first road bike and started cycling about two times per week. What will I do this year?
  3. Improve my career. Last year, my current job improved, I started to get paid for writing health articles, and did some phone consults.
  4. Canoe down the Chattahoochee river (Mr. Cyclist whispered this one to me).
  5. Read 12 books in 2012… now that I have a Kindle. Right now I am reading the 2nd book of the Hunger Games trilogy. Maybe actually go to a book club meeting.
  6. Travel. Not sure where I will go this year. But, I want to road trip the coast of California, or go to the Florida Keys, or go to another island in the Caribbean, or take a ski trip. Of course I want to take a more international trip, but not sure that is in the budget for this year.
  7. Learn how to better save/invest my money. I don’t have a 401K at work, or anything else except a savings account. So, it is time to be more of an adult.
  8. Continue to work on eating clean and consistently exercising. Maybe find an exercise partner and take a cooking class.
  9. Build my friendships/make new friends. I tend to keep my circle of friends very small because I don’t like to have a million commitments, and I can just be an introvert sometimes.
  10. _______________________ Hmm. I don’t know what else. This last one can be to be filled in later.

Hilarious Pics from a 5K/Half Marathon

No, I did not run a half marathon. Perhaps I am too chicken, or just don’t want to put in effort of some longer runs. These pics were from the 5K I did with my sister on Thanksgiving. Mr. Triathlete is the half marathon man.

Lastly, a serious running picture. Not really. I never take any of these 5Ks seriously. My sister and I just run for the fun of it… and for the exercise!

How Was Your Thanksgiving?

I started off my Thanksgiving by making some festive turkey cookies. No, these cookies are not modified to be healthy because they are simply made for the purpose of being festive.

My neighbor had requested that I make her my famous turkey cookies, so I iced and iced and frosted and glazed and decorated the day away.

The trick to these cookies is practice, and the correct recipe for the royal icing. I referred to Alton Brown’s recipe of course! If you don’t use egg whites, you can use meringue powder which is the key ingredient for icing that holds up and stays shiny.

My sister was put to work peeling potatoes.

My Mom and I didn’t trust her with much else in the kitchen. Just kidding–I know she can do much more than just peel potatoes.

For an appetizer, I made a cheese ball that everyone loved.

It was so easy. I highly recommend it. All you need is one 8 oz. small container of reduced fat chive/onion cream cheese, one 8 oz. plain reduced fat cream cheese, 2 cups of reduced fat shredded cheddar cheese, 2 TBSP. paprika, pinch of garlic and onion seasoning, and a pinch of cayenne pepper. Mix everything together, shape into a ball, and let sit for a few hours in the fridge to harden. It was supposed to look like a pumpkin (with a piece of celery sticking out the top), but I forgot.

My favorite is sweet potato casserole.

I made green beans this year with shallots, mushrooms, and a small amount of pancetta.

My Mom made “luxurious” mashed potatoes.

She was obsessed with getting all the lumps out and making the potatoes as creamy as possible because that’s how my Grandma makes them she says.

For dessert we had a pumpkin roll, apple pie, cookies, pecan pie, and tres leche cake (soaked in 3 kinds of milk).

After dinner, we were stuffed, but my sister and I were watching Taylor Swift and had a sugar rush from dessert.
